Dominique Laurent, a former pastry chef, transitioned into winemaking in 1988, establishing himself as a négociant-éleveur in Burgundy. He is renowned for sourcing grapes from old vines with low yields across the Côte d'Or and occasionally from the Côte Chalonnaise. In 2006, he partnered with his son Jean to create Domaine Laurent Père et Fils, acquiring 10 hectares of vineyards in prestigious appellations such as Meursault, Nuits-Saint-Georges, and Échezeaux.
Operating from a facility in Gilly-lès-Cîteaux, Laurent emphasizes traditional winemaking methods. He is particularly noted for his own cooperage, producing high-quality oak barrels from 300-year-old Tronçais forest trees, which he personally selects. This meticulous approach aims to preserve the authenticity and aromatic complexity of each cuvée.
The soils across Laurent’s holdings reflect the geological backbone of Burgundy: Jurassic limestone with varying layers of marl, clay, and gravels. In the Côte de Nuits, his plots sit on compact limestone that contributes to structure and mineral tension, while the Côte de Beaune parcels, with deeper clay and calcareous marl, offer broader texture and ripeness. Across appellations, his wines echo the fine grain of the soils—dense yet lifted, earthy yet transparent.
