Established in the late 19th century, Domaine Tollot-Beaut is a family-run estate located in Chorey-lès-Beaune. Currently managed by cousins Nathalie, Jean-Paul, and Olivier Tollot, the domaine encompasses approximately 24 hectares across various appellations, including Beaune, Savigny-lès-Beaune, and Aloxe-Corton. Tollot-Beaut was among the first in Burgundy to bottle its own wines, beginning in 1921.
Chorey-lès-Beaune, situated in the Côte de Beaune, is known for producing approachable and fruit-forward Pinot Noir wines. The region's vineyards are located on the plains below the Côte d'Or escarpment, benefiting from a continental climate that provides a balance of sun and rainfall, ideal for grape cultivation. Tollot-Beaut's holdings in this area allow them to craft wines that are both expressive and reflective of their specific vineyard sites.
The soils in Chorey-lès-Beaune are predominantly composed of alluvial deposits with a mix of clay and limestone, contributing to the wines' freshness and approachability. Tollot-Beaut's vineyards, such as the Pièce du Chapitre monopole, feature well-drained soils that impart a distinctive minerality to the wines. The estate's commitment to sustainable viticulture and meticulous vineyard management ensures that each wine authentically expresses its terroir.
