Founded in 2016 by Pauline Mourrain and Laurent Troubat, L'Austral is a young estate located in the village of Puy-Notre-Dame within the Saumur appellation of the Loire Valley. Both trained as engineers, Pauline and Laurent transitioned into winemaking after gaining diverse agricultural experiences in Australia, including viticulture and beekeeping. Their passion for natural and biodynamic practices led them to lease 4 hectares of vines from Françoise and Philippe Gourdon of Château Tour Grise, who had cultivated the land biodynamically for over two decades. Today, L'Austral manages a total of 6 hectares, focusing on expressing the purity and freshness of their wines through minimal intervention.
Situated in the Anjou-Saumur wine region, Puy-Notre-Dame benefits from a temperate climate influenced by the Atlantic Ocean, providing moderate temperatures and adequate rainfall. This climate, combined with the region's diverse soils, creates ideal conditions for cultivating Chenin Blanc and Cabernet Franc. The area's commitment to organic and biodynamic viticulture has fostered a community of like-minded producers, contributing to the region's reputation for high-quality, terroir-driven wines.
L'Austral's vineyards are characterized by their limestone-rich soils, particularly the Turonian chalk that underlies much of the Saumur appellation. These soils impart a distinct minerality and freshness to the wines. The estate employs traditional farming methods, including the use of draft horses for plowing and manual harvesting. In the cellar, fermentation occurs with indigenous yeasts, and aging is conducted in stainless steel tanks or neutral barrels to preserve the wines' vibrant character. The resulting wines are noted for their clarity, balance, and expression of place.
