Domaine Jaeger-Defaix, located in Rully within the Côte Chalonnaise, is managed by Hélène Jaeger-Defaix, who took over her family's vineyards in 2002. The domaine's history dates back to the 16th century, with Hélène's great-grandfather, Henri Niepce, playing a pivotal role in Rully achieving AOC status in the 1930s. Since 2009, the estate has been certified organic, reflecting a commitment to sustainable viticulture.
Rully is situated in the southern part of Burgundy, just minutes from Beaune, and shares similar soil types with the Côte de Beaune. The region is known for its Premier Cru vineyards, which benefit from clay-limestone soils and a favorable climate that allows for the production of elegant Chardonnays and Pinot Noirs.
The terroir of Domaine Jaeger-Defaix's vineyards is characterized by clay-limestone soils that are particularly well-suited for Chardonnay. The Premier Cru vineyards, such as Mont-Palais and Cloux, are located on slopes with excellent drainage and sun exposure, contributing to the wines' freshness and minerality. The Rabourcé vineyard, situated on a steep slope with white clay soils, is known for producing rich and powerful wines due to its early ripening conditions.
