Domaine Fabien Coche continues a respected lineage within Meursault, building upon the legacy of the Coche family with a distinct identity since Fabien Coche established his independent label in 2005. Formerly part of Domaine Coche-Bizouard, Fabien’s work stands out for its precise vinification and restrained oak use, allowing vineyard character to guide the expression. The domaine remains firmly rooted in traditional Burgundian techniques, but Fabien’s modern sensibility and careful expansion of vineyard holdings have positioned it as a rising force in Côte de Beaune.
The estate operates across several communes including Meursault, Pommard, Auxey-Duresses, and Monthelie, with a stronghold in white wine production centered in Meursault. This village is globally recognized for producing wines with richness and structure, though Fabien’s parcels span a range of altitudes and exposures, lending him diverse raw material. His plots in lesser-known neighboring villages allow for a more accessible interpretation of the Côte de Beaune, complementing the more prestigious appellations in his portfolio.
The terroir is defined by deep, limestone-clay soils and complex subsoils varying across Fabien’s holdings. In Meursault, the soils’ high active limestone content contributes to the mineral tension seen in his whites, while well-drained slopes offer natural concentration. The cooler mesoclimates of Auxey-Duresses and Monthelie temper ripeness, resulting in wines with lifted aromatics and taut acidity.
