Formerly part of Domaine Coche-Bizouard, Fabien’s work stands out for its precise vinification and restrained oak use, allowing vineyard character to guide the expression. The domaine remains firmly rooted in traditional Burgundian techniques, but Fabien’s modern sensibility and careful expansion of vineyard holdings have positioned it as a rising force in Côte de Beaune.
The estate operates across several communes including Meursault, Pommard, Auxey-Duresses, and Monthelie, with a stronghold in white wine production centered in Meursault. This village is globally recognized for producing wines with richness and structure, though Fabien’s parcels span a range of altitudes and exposures, lending him diverse raw material.
