Mas Cal Demoura, located in Jonquières within the Terrasses du Larzac appellation, was founded in the early 1990s by Jean-Pierre Jullien. The name "Cal Demoura" translates from Occitan as "we must stay," reflecting Jullien's commitment to preserving the Languedoc's viticultural heritage during a period when many were abandoning the region's vineyards. In 2004, Vincent and Isabelle Goumard took over the estate, bringing with them a dedication to quality and terroir expression. They expanded the vineyard holdings and continued the estate's legacy of producing wines that showcase the unique characteristics of the region .
Situated approximately 30 kilometers west of Montpellier, the Terrasses du Larzac benefits from a Mediterranean climate tempered by the cool winds from the nearby Larzac plateau. This microclimate allows for a longer growing season, contributing to the development of complex flavors in the grapes. The region's diverse soils, primarily composed of limestone gravel and clay-limestone, provide excellent drainage and impart distinct mineral qualities to the wines.
Mas Cal Demoura's 16 hectares of vineyards are cultivated organically, with certification achieved in 2010. The estate grows a variety of red and white grape varieties, including Carignan, Cinsault, Grenache, Mourvèdre, Syrah, Chenin Blanc, Petit Manseng, Roussanne, and Viognier. The vines, averaging 30 years in age, are maintained with low yields to ensure concentration and quality. Harvesting is done by hand, and vinification is carried out using natural yeasts, with careful attention to preserving the integrity of each parcel. The resulting wines are known for their balance, freshness, and expression of terroir .
