Their philosophy emphasizes respect for nature and a deep connection to their vineyards in the Terrasses du Larzac.
Located in the Terrasses du Larzac, a sub-region of Languedoc in southern France, Domaine Saint Sylvestre benefits from a Mediterranean climate. The region experiences hot, sunny days and cool nights due to its proximity to the Larzac plateau, creating ideal conditions for Syrah, Grenache, and Mourvèdre, as well as white varieties like Marsanne and Roussanne.
The terroir of Domaine Saint Sylvestre is characterized by its limestone and clay soils, which promote balanced water retention and drainage. The vineyards’ elevation and the cooling influence of the nearby plateau ensure slow ripening, preserving freshness and aromatic complexity.
